Strawberry Kiwi Jam

Total Calories: 1,428

Ingredients

* See note below.
1 pint strawberries rinsed and stemmed
3 kiwi fruits peeled and quartered
3 1/2 cups sugar
1 tablespoon lemon juice
3/4 cup water
1 (1 3/4-ounce) package powdered pectin

Directions:

* There's no jam on the market like this! Make it with fresh strawberries if possible, but frozen whole strawberries, thawed, will do. It's best to make just one batch at a time to be sure it sets. Place half of the strawberries at a time in a food processor bowl or blender container. Cover and puree (you will need about 1 cup total). Place in a large bowl. Puree kiwi fruit and add to bowl. Stir in sugar and lemon juice until well blended. Let stand for 10 minutes. Stir and let stand 5 minutes longer.

In a small saucepan, stir water and fruit pectin. Bring to a boil and boil for 1 minute, stirring constantly. Pour over fruit and stir constantly for 3 minutes.

Pour into small glass or heavy, plastic containers with tight-fitting lids, leaving 1/2 -inch headspace. Wipe rims with a damp cloth. Seal tightly. Let stand at room temperature until set, up to 24 hours.

Store in the refrigerator up to 3 weeks or freeze up to 6 months.

Cut out designs from old Christmas cards and glue to lids of jars or containers. Trim with ribbons or bows. Attach a label giving the recipe name.
