Split Pea Soup

Ingredients

1 pound yellow or green dry split peas
2 quarts water cold
1 1/2 pounds ham hocks sliced
3/4 cup onion minced
1 cup celery finely diced
1 cup carrot finely diced pared
Salt and freshly ground pepper to taste

Directions:

Cover peas with water and soak overnight (or simmer gently 2 minutes, then soak 1 hour). Add ham hock and onion. Bring to boil reduce heat, cover, and simmer (don't boil) 1 1/2 hours. Stir occasionally. Remove ham hock cut off meat, dice, and return to soup. Add remaining vegetables. Simmer, uncovered, stirring occasionally, 30 to 40 minutes. Add salt and pepper to taste.
