Skillet Apple Pancake

Ingredients

1 apple medium baking peeled and chopped (about 1 1/4 cups)
1/4 cup brown sugar packed
1/4 cup raisins
3/4 cup flour
1/2 teaspoon baking powder
1/4 salt
1/2 cup milk or half-and-half
4 eggs
1 tablespoon butter or margarine
Vanilla Glaze (see below)

Directions:

At least 30 minutes or up to 1 hour before serving: In a small bowl, stir together apple, brown sugar and raisins set aside.

In a large mixer bowl, stir together flour, baking powder and salt. Add milk. Beat at low speed until blended. Beat in eggs, one at a time. By hand, stir in apple and raisin mixture. If making ahead, set aside up to 30 minutes.

About 30 minutes before serving: Place butter in a 10-inch ovenproof skillet.* Over medium heat, melt butter. Pour in batter all at once and cook for 1 minute.

Place skillet with apple mixture in oven. Bake in a preheated 425° oven for 20 to 25 minutes or until pancake is puffed and golden.

To serve: Drizzle pancake with glaze. Cut into wedges and serve immediately.

* If skillet is not ovenproof, wrap skillet handle with foil.
