Skewered Pork With Peanut Sauce

Ingredients

20 bamboo skewers 6-inch
1/4 cup lemon juice fresh
2 tablespoons soy sauce
2 cloves garlic minced
1 teaspoon sugar
1/2 teaspoon salt
1 1/2 pounds boneless pork shoulder cut in 1/2 -inch cubes
Peanut Sauce:
2 tablespoons chunky peanut butter
1 tablespoon butter or margarine
1 tablespoon soy sauce
1 teaspoon lemon juice fresh
1/4 teaspoon red hot chili pepper crushed dried or to taste
1/2 teaspoon sugar
1/4 cup cream

Directions:

Soak skewers in water for 2 hours drain. In bowl, combine lemon juice, soy sauce, garlic, sugar, and salt. Add pork and toss. Marinate for 3 hours at room temperature. Drain and reserve marinade. Thread 4 or 5 cubes of pork onto each skewer and wrap remaining end of skewer in foil. Grill pork over medium-hot coals, turning and basting with reserved marinade for 10 minutes or until cooked through.

Combine peanut butter, butter or margarine, soy sauce, lemon juice, hot pepper, and sugar in saucepan. Add heavy cream and stir with whisk over low heat until smooth. Stir in remaining marinade and heat sauce until hot, but do not boil. Transfer sauce to serving bowl set bowl in middle of platter and surround with skewered pork.
