Roadrunner Burritos

Ingredients

1/2 pound ground beef
1 (15-ounce) can chili beans chili beans in gravy
1 teaspoon oregano dried leaves
1/2 teaspoon garlic salt
Warm flour tortillas
Additional ingredients, if you wish

Directions:

1. Place ground beef in a medium microwavable bowl, breaking meat into small pieces. Place a piece of waxed paper over the top.

2. Microwave at 100% power (700 watts) for 2 minutes. Stir and break up pieces of meat. Cover with waxed paper again. Microwave at 100% power 1/2 to 1 minute longer or until beef loses most of its pink color. Pour off any liquid.

3. To the cooked beef, add chili beans with sauce, oregano leaves, and garlic salt. Stir until combined. Place a piece of waxed paper over the top.

4. Microwave at 100% power for 1 minute. Stir and cover with waxed paper again. Microwave at 100% power 1 to 1 1/2 minutes longer or until mixture is hot. Remove from microwave oven with hot pads.

5. Warm tortillas (see below). Spoon filling down center of each tortilla and roll up. If you wish, add additional ingredients, such as shredded cheese, chopped tomatoes, small chunks of avocado, and shredded lettuce. Serve immediately.


To Warm and Soften Flour Tortillas: Dampen a clean terry cloth dish towel until wet. Squeeze out as much water as you can. Place 4 flour tortillas in center of towel and cover with ends of towel. Microwave at 100% power (700 watts) for 1 minute or until warm and soft.
