Rainbow Balloon Cake


Serves: 12

Ingredients

3 cups fluffy white frosting prepared from a mix or Old-Fashioned Fluffy Frosting
4 drops food colors blue
1 13 x 9 x 2-inch cake left in pan (try the Sour Cream Chocolate Cake)
About 12 purple jelly beans
About 12 green jelly beans
About 12 yellow jelly beans
About 12 orange jelly beans
About 12 red jelly beans
10 fruit gem pectin candies or sour balls in various colors
1 (4 1/4-ounce) tube blue decorating icing with outlining tip

Directions:

To prepare the frosting: While beating the frosting, tint with food color until pale blue. Cover and set aside until ready to use.

To prepare the cake: Brush loose crumbs from surface of cake with a soft pastry brush. Frost top of cake with frosting.

To decorate the cake: Make a rainbow across lower corner of the cake using the jelly beans to make the stripes. The color of the stripes can be in any order you wish. To make balloons, arrange fruit candies or sour balls on top of cake. With blue icing, draw strings.
