Pork And Tuna-Stuffed Pitas

Ingredients

3/4 pound ground pork (about 1 1/2 cups)
1 (6 1/2-ounce) can tuna drained and flaked
1/2 cup salted, chopped
2 tablespoons onions minced
2 teaspoons lime rinds grated
2 tablespoons lime juice
2 tablespoons coconut flaked chopped
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon ginger ground
1/8 teaspoon garlic powder
1/2 cup mayonnaise
4 pita bread
butter or margarine
2 cups lettuce shredded

Directions:

In a large skillet over medium heat, cook and stir ground pork for 10 minutes or until well cooked and light brown. Drain off excess fat.

In a medium bowl, mix cooked pork, tuna, peanuts, onion, lime rind and juice,coconut, chili powder, salt, ginger and garlic powder until combined. Stir in mayonnaise until evenly coated. Cover and chill at least 1 hour or up to 4 hours to develop flavor.

To serve, cut pita pockets in half. Spread inside of pitas with butter or margarine. Wrap in foil. Bake in a preheated 350° oven for 10 minutes.

Fill each pita half with about 1/3 cup of the filling and top with about 1/4 cup lettuce.
