Peanut Butter-Brittle Pie

Ingredients

Zwieback Crust:
1 1/2 cups zwieback crumbs
2 tablespoons brown sugar
1/2 cup butter real, melted
1 teaspoon cinnamon ground
* Part two.
1/2 cup chunky peanut butter
1 quart vanilla ice cream softened
2/3 cup crushed peanut brittle (reserve 1 tablespoon)
2/3 cup cream whipped

Directions:

Heat oven to 350° F. Combine ingredients until well-blended. Press mixture into 10-inch pie pan to form even crust. Bake for 10 to 12 minutes.

Filling:
*Combine peanut butter with ice cream using an electric mixer to thoroughly blend. Spoon into cooled crust. Freeze overnight. Twenty minutes before serving fold peanut brittle into whipped cream and spread on top of frozen pie. Sprinkle with reserved crushed peanut brittle.
