Overnight Dessert

Ingredients

30 vanilla wafers finely crushed
1/4 pound butter or margarine
3/4 cup granulated sugar
2 eggs separated
1 (8-ounce) can crushed pineapple drained (reserve juice)
2 teaspoons lemon jello
1 cup pecans chopped
Heavy cream, whipped
Confectioners' sugar to taste

Directions:

Line a 9-inch pan with half of the wafer crumbs. Cream together butter or margarine and granulated sugar. Add 2 beaten egg yolks and drained pineapple. Heat pineapple juice and add lemon-flavored gelatin. Cool. When thickened, add creamed mixture and chopped nuts. Beat egg whites until stiff fold in the other ingredients. Spread over wafer crumbs, then top with remainder of crumbs. Refrigerate overnight. Serve topped with whipped cream sweetened with confectioners' sugar.
