No-Bake Frankfurter Casserole

Ingredients

1/2 cup onion coarsely chopped
2 tablespoons vegetable oil
1/2 cup celery sliced
6 hot dogs cut in 1-inch pieces
6 mushrooms medium, quartered
1 (8-ounce) jar pasteurized process cheese spread pasteurized process
1/4 cup milk
1 tablespoon mustard prepared
4 cups red potatoes cooked, peeled and cubed (about 3 large)
paprika or chopped parsley

Directions:

In a 10-inch skillet over medium heat, saute onion in oil for 3 minutes. Add celery and saute for 3 minutes. Add frankfurters and mushrooms and saute for 5 minutes or until frankfurters are plump and celery is crisp-tender. Spoon off excess fat. Reduce heat to low.

Stir in cheese spread, milk and mustard until blended and saucy. Gently stir in potatoes until well coated. Cover and simmer for 5 minutes or until heated through, stirring occasionally.

Transfer to a 1 1/2 -quart covered casserole. Sprinkle with paprika or parsley.
