Mincemeat Diamonds

Ingredients

2 eggs large
1 cup mincemeat prepared
1/2 cup brown sugar packed
2 tablespoons vegetable oil
1 teaspoon brandy or vanilla extract (optional)
1 1/4 cups flour
1/4 teaspoon baking soda
1 cup walnuts chopped
Cream Cheese Frosting (see below)

Directions:

Preheat oven to 350°. Generously grease a 13 x 9 x 2-inch baking pan or coat with non-stick spray.

In a large bowl, whisk eggs until well beaten. Stir in mincemeat, brown sugar, oil, and extract. Stir in flour and baking soda until well blended. Stir in nuts. Spread batter in pan.

Bake 25 minutes or until wooden pick inserted in center comes out clean. Cool pan on a wire rack.

Frost. If desired, lightly score top with a fork to create a decorative pattern. Chill. Cut into diamonds or bars with a sharp knife. Cover and store in the refrigerator.


CREAM CHEESE FROSTING: In a small mixer bowl at medium speed, beat 1 package (3 oz.) softened cream cheese until smooth. At low speed, gradually beat in 2 cups powdered sugar and 1/2 teaspoon brandy or vanilla extract until of spreading consistency.
