Meringue Shell

Ingredients

3 egg whites, at room temperature
1 teaspoon vanilla extract
1/4 teaspoon cream of tartar
1/8 teaspoon salt
1 cup sugar

Directions:

Place egg whites in large bowl, set aside yolks for another recipe add vanilla, cream of tartar, and salt. Beat until frothy. Gradually add sugar, beating until very stiff peaks form and sugar is dissolved. Cover baking sheet with plain ungreased paper. Using a 9-inch round cake pan as guide, draw a circle on paper. Spread meringue over circle shape into shell with back of spoon, making bottom 1/2 inch thick and mounding around edge to make sides 1 3/4 inches high. Bake at 275 degrees F. for 1 hour. Turn off heat and allow to dry in unopened oven for at least 2 hours. Cool. Fill with fresh fruit and garnish with slightly sweetened whipped cream.
Note: Individual meringues may be made by shaping 1/3 cup meringue mixture into individual 3 1/2-inch circles. Bake as above, allowing 1 hour for shells to dry in closed oven. Makes 8 shells.
