Meringue Nut Pie

Ingredients

3 eggs white at room temperature
1/8 teaspoon cream of tartar
1 cup granulated sugar
1 teaspoon vanilla extract
20 round buttery crackers crushed
1 teaspoon baking powder
1 cup pecans chopped or walnuts
1 cup cream whipped or vanilla ice cream
2 tablespoons powdered sugar
Grated simi-sweet chocolate

Directions:

Beat egg whites until foamy, then add cream of tartar and continue beating. After they begin to hold shape, add sugar 2 tablespoons at a time, beating until stiff peaks form. Add vanilla and beat into meringue. Remove beaters. Fold in crackers, baking powder and nuts. Spoon batter into a 10-inch buttered, glass oven dish. Bake in 350° oven on middle rack for 25 minutes. Turn off heat and let remain in oven another 15 minutes. Cool completely on rack, then spread with whipped cream to which 2 tablespoons confectioners' sugar has been added. A few gratings of semi-sweet chocolate on top are a nice touch.

Note: If desired, serve with ice cream instead of whipped cream.
