Melon Ambrosia Salad

Ingredients

1 cantaloupe medium peeled, seeded, and diced (about 3 cups)
1 cup green seedless grape halved
1/2 cup coconut shredded
1 (8-ounce) container vanilla yogurt or peach lowfat yogurt
bibb lettuce, or leaf lettuce
1/3 cup nuts chopped
Fresh mint leaves (optional)

Directions:

In a medium bowl, combine cantaloupe, grapes, and coconut. Fold in yogurt. Cover and refrigerate 30 minutes. Best served the same day.

To serve, stir mixture and spoon onto lettuce leaves. Sprinkle nuts over the top. Garnish with mint leaves if desired.


NOTE: A combination of two kinds of melon makes a colorful salad combination. Mixture can easily be doubled and served in an attractive glass bowl for buffets or as a brunch side dish.
