Lettuce Greens With Roquefort Dressing


Serves: 6
Total Calories: 160

Ingredients

1 head Romaine lettuce or mixed salad greens
4 scallion minced
1 tablespoon parsley finely minced fresh
Dressing:
1/2 cup vegetable oil or 1/4 cup each vegetable oil and olive oil
3 tablespoons lemon juice fresh
3 ounces roquefort cheese crumbled
1/4 teaspoon black pepper freshly ground

Directions:

Toss greens with scallions and parsley. Measure ingredients for dressing into a jar with a lid and shake well. This dressing will probably not need salt. If you like a smooth dressing, put in blender, but I prefer mine with the crumbled cheese showing.
