For a nice, flat-topped cake to frost or decorate, try this. Tear an old towel into 6- or 8-inch wide strips. Dip them in water and wring out lightly. Fold the strips to the height of your baking pan and pin them in place around the outside of the pan. Evaporation will keep the edges of the cake from baking faster than the middle, preventing a hump in the center.
