Honey Divinity Drops

Ingredients

2 1/2 cups sugar
1/4 cup honey
2/3 cup water
1/4 teaspoon salt
2 eggs white
1 teaspoon vanilla extract
1/2 cup nuts chopped

Directions:

In saucepan, combine sugar, honey, water, and salt. Stir over low heat until sugar dissolves continue cooking slowly without stirring until 265° F is reached on a candy thermometer or when 1/2 teaspoon of syrup dropped in cold water forms a hard yet pliable ball. While syrup is still cooking, beat egg whites until very stiff in large bowl of mixer. With mixer on high speed, slowly pour in hot syrup, beating constantly scrape sides with rubber scraper. Beat until mixture loses its gloss (about 10 minutes) and a small amount dropped from a spoon holds its shape. Blend in vanilla and nuts. Drop by teaspoonfuls onto buttered baking sheet.
