Golden Relish

Ingredients

1 1/2 cups cider vinegar
3/4 cup light corn syrup
2/3 cup sugar
1/4 cup water
1 tablespoon salt
1 1/2 teaspoons celery seeds
1 1/2 teaspoons mustard seeds
3 cups carrots shredded
1 1/2 cups onions finely chopped
3/4 cup green bell pepper finely chopped
3/4 cup red bell pepper finely chopped
3/4 cup cabbage finely chopped

Directions:

In a 4-quart saucepot, mix vinegar, corn syrup, sugar, water, salt, celery seeds and mustard seeds. Over medium-high heat, bring to a boil.

Stir in carrots, onion, green and red pepper, and cabbage. Return to a boilreduce heat to low, cover and simmer, stirring occasionally, for 20 to 25 minutes or until vegetables are tender.

Uncover and cool to room temperature. Transfer to freezer containers, covering relish with liquid and leaving 1/2 -inch headspace. Cover tightly and freeze.

Defrost before serving.
