Golden Pound Cake

Ingredients

2 1/4 cups flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 cup margarine
1 1/2 teaspoons vanilla extract
5 eggs yolk unbeaten
3/4 cup milk
* Part two.
2/3 cup orange juice concentrate
1 teaspoon orange rind grated
1 1/3 cups powdered sugar sifted

Directions:

Heat oven to 350° F. Grease and line 2 8 1/2 x 4 1/2 x 2 1/2 -inch loaf pans. Blend dry ingredients in a bowl. Add margarine, vanilla, egg yolks, and 1/2 cup milk. Beat for 2 minutes at medium speed scraping sides and bottom of bowl constantly. Add remaining 1/4 cup milk and beat for 2 more minutes, scraping bowl frequently. Pour batter into prepared pans. Bake 50 to 60 minutes or until cake tester comes out clean. Cool, remove from pans, and prepare the following glaze.

Golden Glaze:
*Blend glaze ingredients in a small saucepan. Warm, stirring slightly. Prick holes in top of cake with fork and spoon warm glaze over top of loaves.

* For altitudes over 5,000 feet reduce baking powder to 1 1/2 teaspoons.
