Galveston Baked Rice

Ingredients

2/3 cup long grain rice
5 slices bacon fried, crumbled and drippings reserved
2 cups tomatoes peeled, chopped (about 4)
1 (10-ounce) package frozen cut okra thawed
1/2 cup onion chopped
1/4 cup green bell pepper chopped
2 tablespoons green chilies chopped
1/2 cup water
2 teaspoons sugar
1/2 teaspoon salt
dash black pepper

Directions:

Preheat oven to 350°. Butter a shallow 2-quart baking dish.

Spread rice evenly in dish. Spoon reserved bacon drippings over rice. Top with even layers of tomatoes, okra, onion, green pepper and green chilies.

In a small bowl, mix water, sugar, salt and pepper pour over vegetable mixture. Cover with foil.

Bake for 45 minutes. Remove foil, sprinkle with bacon and bake 15 minutes longer or until rice is tender and liquid is absorbed.
