Fried Rice Casserole

Ingredients

1 (10-ounce) package frozen chopped broccoli
1 (11-ounce) can fried rice mix
1 (11-ounce) can cheddar cheese soup condensed
1/4 cup water

Directions:

Preheat oven to 350°.

Cook broccoli according to package directions (MW) drain well.

In a medium bowl, mix fried rice, soup and water until blended. Stir in broccoli until well blended. Pour into a shallow 1-quart baking dish.

Bake for 20 to 25 minutes or until heated through and edges are bubbly.

Serve with beef or pork kabobs, sliced ham or chicken and a mixed salad.

Stovetop Variation: If you prefer, use 1 package (6 1/4 oz.) fried rice mix in place of canned fried rice. Prepare rice according to package directions. When rice is almost done, stir in thawed broccoli and soup (do not add extra water). Mix well. Simmer until heated through and rice and broccoli are done.
