Dressed-Up Potatoes

Ingredients

1 1/2 pounds potatoes small boiling
1/2 teaspoon salt
2 to 3 tablespoons butter or margarine
2 tablespoons parsley chopped fresh

Directions:

Cover the potatoes with water, add the salt and bring to a boil.

Cook for 15 to 18 minutes or until tender. Drain the potatoes place the saucepan with potatoes over medium heat to evaporate all remaining water, shaking pan occasionally to prevent sticking.

Add butter and parsley. Cook and stir until butter melts and coats the potatoes. Serve immediately.

* If larger potatoes are used, cut into 1 1/2 -inch chunks that are slightly rounded.
