Construction Gingerbread

Ingredients

2 cups corn syrup dark
1 1/2 cups brown sugar packed
1 cup vegetable shortening solid
9 cups flour
3 teaspoons cinnamon ground
2 teaspoons ginger ground
1 teaspoon salt
1/2 teaspoon cloves ground

Directions:

In a 3-quart saucepan, mix corn syrup, brown sugar and shortening. Cook over medium heat, stirring occasionally, until satiny and shortening has melted.

In a large bowl, stir together flour, cinnamon, ginger, salt and cloves. Stir in corn syrup mixture until blended. With your hands, knead the dough in the bowl until well blended and smooth. Use as directed in recipe for Yuletide Fireplace or Christmas Tree.

Comment: When making a gingerbread house or other gingerbread structures, if cookie edges are not completely even, they will not fit together well. Using a small, sharp knife, carefully shave the edges until they are straight. Check by standing on edge on the counter or table top.
