Some foods are very susceptible to spoilage and should be avoided if they will need to travel, stand at room temperature, or endure the summer heat for an hour or more before being eaten. Foods to avoid are those containing chopped meat or fish and those made with eggs or dairy products such as custard, cream desserts, or cream fillings.

Foods that keep well are foods that are dry, acidic, or commercially canned. These include hard cheeses, dry cereals, breads, cookies, crackers, jellies, fruit juices, soft drinks, and canned fish, meats, fruits, and vegetables. Dishes that have a high acidic content will remain safe for a longer period of time. High acidic ingredients are tomatoes, vinegar, citrus fruits, pickles, and cranberries.

It is okay to use mayonnaise. Its acidity actually inhibits the growth of harmful bacteria. Just be sure that the mixture containing the mayonnaise is thoroughly chilled before transporting and is kept cold at all times.
