Brunch Burritos

Ingredients

1 pound ground pork
1/2 cup green bell pepper finely chopped
1/3 cup onion finely chopped
2 garlic small minced
1/4 cup picante sauce
1/4 teaspoon salt
8 flour tortillas (8-inch)
12 ounces sharp cheddar cheese shredded (about 3 cups)
Additional picante sauce (optional), warmed
sour cream dairy (optional)

Directions:

At least 45 minutes or up to 24 hours before serving: Crumble ground pork into a medium skillet. Over medium heat, cook until lightly browned. Add green pepper, onion and garlic and saute until vegetables are soft and pork is cooked through. Drain off fat.

Stir in 1/4 cup picante sauce and salt. Place about 1/3 cup of the meat mixture down center of each tortilla. Top with 1/4 cup of the cheese. Fold up bottom side 1/2 inch, then fold in sides of tortilla to make an "envelope" and roll up. Fold up remaining tortillas. Place, seam-side down, in two ungreased 8 x 8 x 2-inch baking dishes. Sprinkle 2 tablespoons of the cheese on top of each burrito. Cover dishes with foil. If making ahead, refrigerate up to 24 hours.

About 35 minutes before serving: Preheat oven to 350° for 10 minutes. Bake burritos, covered, for 20 to 25 minutes or until cheese melts and center is heated through. Serve with warm picante sauce and sour cream if desired.
