Baked Lamb Chop Dinner

Ingredients

8 lamb shoulder
1 onion sliced
1 1/4 cups mushrooms sliced
1 (10-ounce) can beef broth
salt
black pepper
8 potatoes, scrubbed or peeled, and halved

Directions:

Brown lamb chops in skillet, using shortening as needed remove chops. In same drippings, cook sliced onions and mushrooms until soft. Add broth and cook slightly until all drippings are gathered into mixture. Arrange 4 lamb chops in bottom of Dutch oven or casserole. Season with salt and pepper to taste. Add potatoes season again. Top with remaining lamb chops. Pour broth, onions, and mushrooms over all. Cover and bake at 350 degrees F. for 1 to 1 1/2 hours or at 250 degrees F. for 2 to 4 hours.

Variation
Baked Pork Chop Dinner: Use pork shoulder chops in place of lamb chops.
