Apple Coffee Cake

Ingredients

1 egg plus 2 egg yolks
1 1/2 tablespoons buttermilk
1/2 cup butter or margarine, melted and cooled
2/3 cup granulated sugar
2 apples medium cooking unpeeled, quartered, and cored
2 cups flour
1 teaspoon baking soda
1/2 cup walnuts chopped
2 tablespoons brown sugar
1/2 teaspoon cinnamon ground
1/2 teaspoon allspice ground

Directions:

Heat oven to 325° F. Combine eggs, buttermilk, butter or margarine, and granulated sugar in blender process until ingredients are combined. Add apples and continue blending until apples are grated. Combine flour and baking soda in mixing bowl. Add blender ingredients and mix only until combined. Add nuts and stir gently. Spread batter in well-greased and floured 8 x 8-inch baking dish. Combine brown sugar, cinnamon, and allspice sprinkle over batter. Bake for 40 minutes or until tests done. Cool on wire rack. Freezes well.
