Grandma's Banana Cupcakes

Ingredients

1/2 cup butter, softened
1 3/4 cups sugar
2 eggs, beaten
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup sour milk
2 bananas, mashed
1 teaspoon vanilla extract
1/2 cup chopped pecans
Garnish: Cream Cheese Frosting (see Lemonade Cupcakes recipe), banana slices
1 Optional: caramel sauce

Directions:

Blend butter for 5 minutes, using an electric mixer on medium speed. Slowly add sugar; beat in eggs. Combine flour, baking soda and baking powder; add to butter mixture alternately with milk. Stir in bananas, vanilla and pecans. Fill paper-lined muffin cups 1/2 full. Bake at 350 degrees for 18 to 25 minutes, until a toothpick inserted in the center comes out clean. Allow to cool; frost with Cream Cheese Frosting and drizzle with caramel sauce, if using. Top with banana slices. Keep refrigerated.
