Dave's Stuffed Giant Zucchini

Ingredients

4 pounds ground beef or turkey loftover and browned
1 pound pork sausage
4 cups onions diced
4 cloves garlic minced
10 cups cooked rice
salt and pepper to taste
1 (15-ounce) can tomato sauce
2 tablespoons Italian seasoning
1/2 tablespoon tarragon
4 large eggs beaten
1 pound grated Jack and Cheddar cheese (4 cups)
6 to 8 large zucchini

Directions:

In a 14” deep, or larger Dutch oven, brown the sausage, breaking up into small pieces. Add garlic and onion and sauté with sausage until opaque, about 6 to 8 minutes. Remove oven from heat and add ground beef, rice, salt and pepper, tomato sauce, Italian seasoning and tarragon; mix well. Set aside.

Prepare zucchini to fit in additional Dutch ovens and blanch in boiling water for 7 minutes, remove from heat. Remove all but 1 cup boiling water in Dutch ovens 16” and larger or ¾ cup for 12” and 14” Dutch ovens. Add cheese and egg to stuffing mixture and stir well to combine. Place stuffing into empty zucchini halves and mound slightly until all zucchini is filled.

Cover Dutch ovens and bake at 375° for 30 to 40 minutes using 2/3rds rule in ovens up to 16” and 1 ring under and 1 ½ rings on the top of larger Dutch ovens.
