Moms Giant Peach Pancakes

Ingredients

1 cup half and half milk
1/2 cup flour
1/4 cup sugar
8 eggs
powdered sugar
FRUIT TOPPING:
3 tablespoons butter
3 tablespoons brown sugar, packed
1 tablespoon lemon juice
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
5 cups (2 large cans) sliced peaches, drained

Directions:

In a large mixing bowl, combine first 3 ingredients and mix well until smooth. Add 1 egg at a time and mix until smooth before adding the next egg.

Preheat a well greased or oiled, 14” Dutch oven bottom and sides, 450°F. Pour egg batter into Dutch oven, place lid on oven, bake hot at 450°F for 15 minutes, done when brown and fluffy. Dust with powdered sugar.

While baking pancake, in a 10” Dutch oven or pan, melt butter and add brown sugar, lemon juice, cinnamon, and nutmeg. Stir until sugar is melted and dissolved. Add drained peaches, stir to coat and heat through over medium heat.

Cool pancake 5 minutes then pour fruit topping over pancake. Serve hot. Yum Yum!
