Burgundy Goose (Duck) with Raspberry Sauce

Ingredients

4 skinned, boned goose or ducks breasts
MARINADE:
1/2 cup vegetable oil
1/4 cup soy sauce
1/2 teaspoon pepper
1 cup burgundy wine
SAUCE:
1 cup raspberry jam or jelly
1/2 cup water
1 tablespoon brown mustard
2 teaspoons soy sauce
1 teaspoon Worcestershire sauce
(If desired, add salt, pepper, or caraway seeds)

Directions:

Mix well. Pour over breasts; marinate in refrigerator for 1 to 2 hours. Combine sauce ingredients and blend until smooth.

Brown meat in marinade mixture, about 10 minutes each side. Ladle about ¼ c. raspberry sauce on each plate. Top with 1 breast on each plate.
