Question: Can I substitute butter or margarine for the vegetable oil in SuperMoist cakes? What about canola or olive oil for the vegetable oil?

Answer: The good news is that butter, margarine, shortening and all types of vegetable oil can be used interchangeably for the vegetable oil called for in SuperMoist package directions. Although there may be slight differences in texture and flavor, all cakes will have satisfactory baking results.

Measure the same amount of butter, margarine and shortening called for in package directions, then melt and cool the butter, margarine or shortening before preparing the cake mix. Since the amount of oil in a cake mix is small in proportion to all of the combined ingredients, there is very little flavor difference among different types of vegetable oils. Go ahead and use oil labeled vegetable, corn, canola, all types of olive, peanut, sunflower oil and oil blends.

Question: I usually grease and flour my cake pans, but SuperMoist cake mix package directions say to grease only the bottom of the pan. Is flour necessary?

Answer: With our latest cake mix formula, when adding only water, oil and eggs, the cake releases well from the pan without flouring the pan. What a convenience! However, if additional ingredients are added to the cake mix or if you are baking at high altitude, the chances of the cake sticking to the pan increase, and we recommend greasing and flouring the cake pan. In addition, run a knife around the side of the pan before removing the cake to help the cake release easily.

Question: Can I use applesauce in place of the oil in SuperMoist cake mixes? I like to reduce fat in my baking whenever possible.

Answer: Although the appearance and texture of a SuperMoist layer cake is slightly different when made with applesauce instead of oil, results will be satisfactory. You'll need to follow directions for each specific cake mix flavor (see Replacing Oil on page 14). Then the amount of water you add needs to be lower than that called for on standard package directions to make up for the extra moisture in the applesauce. Also, you'll need to use unsweetened applesauce so you aren't adding more sugar to the cake mix. Just mix cake mix with applesauce in the same way as directed on package.

Question: Can I add pudding mix to my favorite cake mix recipe?

Answer: Pudding is already included in SuperMoist cake mixes, so adding extra pudding is not recommended in some cases, the cake would be too moist. There are some recipes in this book that contain extra pudding mix as an ingredient-these cakes have been tested and some ingredients were adjusted with delicious results.
