Rice with Shrimp (Arroz com camarão)

Ingredients

2 pounds fresh shrimp
3 tablespoons cooking oils
1/2 sliced onion
2 chopped tomatoes (without skin or seeds)
1 1/2 cups rice
1 tablespoon salt
3 1/4 cups boiling water
1 tablespoon chopped cilantro

Directions:

Clean and reserve heads of shrimp.

In a heavy frying pan heat cooking oil. Add sliced onion, chopped tomatoes. Fry until tomatoes lose their shape. Add and stir in the rice.

Bring to boil 3 1/2 cups water with shrimp heads, 1 tablespoon salt. Remove shrimp heads and pour over rice.

Cover with tight lid and simmer for about 30 minutes. When nearly ready add chopped cilantro.
