Raisin Cinnamon Oatmeal

Ingredients

8 cups unsweetened apple juice
1 orange juiced and grated for zest
1/2 cup raisins
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
4 cups quick cooking rolled oats (not instant)

Directions:

Put the apple juice, orange zest and juice, raisins, cinnamon, and nutmeg in a large saucepan and stir to combine. Bring to a boil over high heat. Add the oats and stir rapidly for 30 seconds. Cover, decrease the heat to low, and cook for 5 minutes. Serve hot.

Apple-Cherry Oatmeal: Replace the orange zest and juice with 3 apples, peeled, cored, and diced, and the raisins with 1/2 cup of dried cherries.

Pineapple-Coconut Oatmeal: Replace the apple juice with 8 cups of unsweetened pineapple juice, and replace the raisins with 2 cups of unsweetened shredded dried coconut.
