Pineapple-Tarragon Dressing

Ingredients

1/4 fresh pineapple cored and coarsely chopped, or 1 cup unsweetened canned pineapple chunks, juice reserved
1/4 ripe papaya seeded and coarsely chopped
1 cup unsweetened pineapple juice (if using canned pineapple, include the reserved juice)
1 1/2 teaspoons blanched fresh tarragon chopped, or 1/2 teaspoon dried
1 1/2 teaspoons brown rice vinegar
1/2 teaspoon coriander seeds toasted

Directions:

Put all the ingredients in a blender and process on high speed until smooth. Stored in a sealed container in the refrigerator, Pineapple-Tarragon Dressing will keep for 3 days.
