Impossibly Easy Spinach Pie

Ingredients

1 tablespoon margarine or butter
8 medium green onions, sliced (1/2 cup)
2 cloves garlic, finely chopped
1 (10-ounce) box frozen chopped spinach, thawed and squeezed to drain
1/2 cup small curd creamed cottage cheese
1/2 cup Original Bisquick®
1 cup milk
1 teaspoon lemon juice
1/4 teaspoon pepper
3 eggs
3 tablespoons grated Parmesan cheese
1/4 teaspoon ground nutmeg

Directions:

1. Heat oven to 350°. Grease pie plate, 9 x 1 1/4 inches. Melt margarine in 10-inch skillet over medium heat. Cook onions and garlic in margarine 2 to 3 minutes,
stirring occasionally, until onions are tender. Stir in spinach. Layer spinach mixture and cottage cheese in pie plate.

2. Stir Bisquick, milk, lemon juice, pepper and eggs until blended. Pour into pie plate. Sprinkle with Parmesan cheese and nutmeg.

3. Bake about 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Sprinkle with additional sliced green onions if desired.

BETTY'S TIP: In search of a speedy spinach tip? To quickly thaw spinach, place it in a colander or strainer and rinse with warm water until thawed. Squeeze dry with paper towels.
