Mary Lou is a registered dietitian who has spent the majority of her professional life in the field of maternal, child and infant nutrition. Never have we worked with anyone who went the second and third mile so consistently for every one of her clients. When an infant had to be switched to formula, because finances forced the mom back to work, Mary Lou would be working after hours to find a formula the infant could tolerate. When there was an infant who could tolerate only one formula and the formula was being reformulated, Mary Lou would called every store in the valley to save the cans for her until the mom could come collect them.
Mary Lou runs an ecumenical soup kitchen and can turn out low-cost healthful menus revolving around any products or produce donated to this soup kitchen. She was also on the board of Turning Point, a group home for families and children, which shelters them until they can obtain permanent housing. Mary Lou is an ordained deacon in her church. She is very active in the spiritual care of the parishioners. When an acquaintance was jailed, Mary Lou rearranged her lunch schedule so she could offer spiritual comfort. She went beyond the listening ear, she carted loads of laundry home and provided soap, soup packets, etc.
At her most recent job with the local Veterans' Hospital, Mary Lou discovered there were no recipes for low-protein desserts. So Mary Lou set about to create recipes so the veterans on low-protein diets could enjoy one dessert a week. Mary Lou's favorite Betty Crocker product is angel food cake mix. She likes it because it is low-fat and so versatile.
