Apple Salad

Ingredients

1 tablespoon flour
1/2 cup sugar
1 egg beaten
2 tablespoons vinegar
1/3 cup water
7 apples cored and diced
2 tablespoons lemon juice
2 cups chopped walnuts

Directions:

Stir together flour and sugar in the top of a double boiler. In a small bowl, whisk beaten egg, vinegar and water. Add to flour mixture, mix well and cook, stirring often, in double boiler over medium heat until sauce is slightly thickened. Set aside to cool. Meanwhile, prepare the apples, sprinkle them with the lemon juice to preserve their color toss them gently with the walnuts. When the sauce is cooled, drizzle over the apples and nuts, toss and refrigerate at least one hour before the meal.
