FEATURED RECIPE: Breakfast In A Cookie

Ingredients

1/3 cup whole bran cereal, wheat or oat
1/2 cup orange juice
1/4 cup honey or sugar
1/4 cup unsweetened applesauce
1 egg or 2 egg whites
2 teaspoons vanilla extract
1 cup pastry whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup fat-free dry milk powder
2 teaspoons grated orange rinds
2 teaspoons cinnamon
1 teaspoon nutmeg
1 cup quick-cooking rolled oats
1/2 cup finely chopped nuts
1 cup raisins

Directions:

1. Preheat oven to 375°F.

2. In a small bowl, combine bran and orange juice set aside.

3. In a large bowl, mix honey and applesauce add egg and mix.

4. Blend in bran-orange juice mixture and add vanilla.

5. Add remaining ingredients to wet mixture.

6. Drop by level teaspoonful onto cookie sheets coated with nonstick cooking spray, about 2 inches apart, and bake for 10-12 minutes or until golden brown.
