Peppermint Hot Chocolate Cookies
These peppermint hot chocolate cookies are the ideal holiday dessert. They bring all the warm flavors from your favorite fixings in one bite-sized treat.

1 cup butter, softened
1 cup sugar
1 large egg, room temperature
1 teaspoon peppermint extract
2 1/3 cups all-purpose flour
1/3 cup baking cocoa
1 teaspoon salt
1 teaspoon baking soda
1 package (11-1/2 ounces) milk chocolate chips
1 cup marshmallow creme
1 cup finely crushed peppermint candies
Directions:
Preheat the oven to 375°F. Cream the butter and sugar in a large bowl until light and fluffy, five to seven minutes. Beat in the egg and peppermint extract. Editor's Tip: Creaming butter and sugar takes longer than you might think. Be sure to beat these two ingredients for at least five minutes, giving the mixture a pale yellow appearance.
In a medium bowl, combine the flour, cocoa powder, salt and baking soda. Gradually add the dry ingredients to the creamed mixture and mix well.
Drop the dough by tablespoonfuls 2 inches apart on greased baking sheets. Bake until the tops crack, 10 to 12 minutes. Remove to wire racks to cool completely.
In a microwave, melt the chocolate chips and stir until smooth. Drop a teaspoonful of marshmallow creme into the center of each cookie. Dip half of each cookie into the melted chocolate, allowing any excess to drip off. Immediately sprinkle with crushed peppermint candies. Place the cookies on waxed paper and let them stand until set.
