This One Pot French Onion Soup is So Easy!

Not only is fall my favorite season for the crisp weather, warm, cozy outfits , it is of course also wonderful because you get to bust out all your favorite recipes for soups and stews and of course do more baking. I love baking this time of year through the end of the year (before New Years resolutions start up again ha!) with all the warm spices with pumpkins and apples and everything in between.


I also love that football season is here and soon to be NBA season, and while I do enjoy watching a game or two here and there, admittedly it’s more because I naturally spend more time in my sewing room while my husband and son are completely enamored with all the sports on constantly! So yay for cookies and new fall dresses! :)

I love making a good French onion soup because that is my husband’s all-time favorite soup. I think when he and I retire, we need to find a way to move to France, because I really think those are our people. We are all about the soups, breads, cheeses and late night partying. At least we like to think we are. About 10 years ago we’d stay up on weekends until 4 in the morning hanging out together, playing pool and watching movies and shows all night while our little ones were snoozing. I don’t know how we did that! Nowadays, he is nearing 40 and we need our sleep, but we still like to pretend we are late night party owls.

One Pot French Onion Soup

One Pot French Onion Soup - A no-fuss version! No transferring to ramekins, no nothing! Make everything into a ONE POT WONDER and serve. So easy. SO GOOD!

Prep time:
Serving size: 6
Calories per serving: 262

Ingredients:
12 3/4-inch-thick French baguette slices
1/4 cup unsalted butter
3 pounds sweet onions (sliced)
3 cloves garlic (minced)
1/3 cup dry white wine
6 cups beef stock
4 sprigs fresh thyme
2 bay leaves
2 teaspoons balsamic vinegar
Kosher salt and freshly ground black pepper (to taste)
1 1/2 cups shredded Gruyère cheese
1/2 cup freshly grated Parmesan


Directions:
Preheat oven to broil.

Place baguette slices onto a baking sheet. Place into oven and broil until golden brown on both sides, about 1-2 minutes per side; set aside.

Melt butter in a large oven-proof braiser over medium heat. Add onions, and cook, stirring often, until deep golden brown and caramelized, about 30-40 minutes.* Stir in garlic until fragrant, about 1 minute.

Stir in wine, scraping any browned bits from the bottom of the braiser.

Stir in beef stock, thyme and bay leaves. Bring to a boil; reduce heat and simmer, stirring occasionally, until slightly reduced, about 15-20 minutes. Remove and discard thyme sprigs and bay leaves.

Stir in balsamic vinegar; season with salt and pepper, to taste.

Top with baguette slices to cover the surface of the soup completely; sprinkle with cheeses.

Place into oven and broil until golden brown and cheeses have melted; about 3-5 minutes.

Serve immediately.
