We Love this Instant Pot “Lazy Lasagna”

I love how many amazing fast, easy and delicious recipes I have found this year. This has been the year full of these kinds of easy weeknight meals. My mom and sisters and I have a constant text chain that is always blowing up with recipe sharing for quick and easy meals. We are also sharing tips for making meals more affordable. Groceries are so expensive right now it makes me sick!

My best tip lately along those lines is to make a weekly meal plan and first take a look in your fridge what needs to be used up and then shop your pantry to see what you can supplement with in there. Pasta and rice and beans seem to be great filling options as sides that are still quite affordable and will fill your family’s tummies.


I love making pasta dishes probably the most. Lasagna is a big hit around here, but I have an option that can be whipped up quickly in the Instant Pot with a fraction of the time and effort of lasagna. This is another recipe from Six Sisters Stuff and is one that all of us love so much! There are so many side dishes that go great with it like garlic bread or toast, a quick green salad or veggie side dish.


You use bow tie pasta with your favorite jarred spaghetti sauce and you can beef it up with ground beef, Italian sausage or a combination of both. I love the combination of beef and sausage with my Italian dishes--whatever you can find that is on sale at the moment. You brown up the ground beef, add the noodles and sauce and some broth--cook that in the Instant Pot and then add sour cream and Parmesan cheese to make it creamy and extra delicious. You can add some fresh chopped basil or parsley to really add to the presentation, as well as giving it extra depth for flavor.

I have tried many many ground beef recipes in the Instant Pot over the past couple years, and certainly not all of them are winners! This one definitely is though. It’s one of the best ground beef Instant Pot recipes I’ve ever tried and I love how it has ingredients I pretty much always have on hand.

Instant Pot Ground Beef Lazy Lasagna

This Instant Pot ground beef lazy lasagna recipe is the perfect weeknight meal. Full of amazing Italian flavors and creamy melty cheese. Author: Camille Beckstrand Recipe Type: American

Ingredients:
1 pound ground beef (can also use Italian sausage)
1/2 teaspoon garlic powder
1 tablespoon Italian seasoning
12 ounces bow tie pasta
2 cups beef broth
26 ounces spaghetti sauce
1/2 cup sour cream
3/4 cup shredded mozzarella cheese
1/2 cup shredded Parmesan cheese optional topping
Fresh Chopped basil optional topping


Directions:
Press the SAUTE button and when it has heated up, add ground beef, garlic powder, and Italian seasoning. Cook until ground beef is no longer pink

Drain grease if desired.

Dump uncooked bow tie pasta on top of meat and spread evenly.

Pour beef broth on top of the pasta, covering as much (if not all) of the pasta as possible.

Pour the spaghetti sauce on top of the pasta. Do not mix – just leave as is.

Place lid on top of Instant Pot and turn valve to SEALING (not venting).

Press MANUAL (or PRESSURE COOK) and set timer for 4 minutes.

Once it's done cooking, do a QUICK RELEASE of the pressure (if foam and bubbles start spewing out, move the valve back to venting and wait a minute or two for some of the pressure to die down before opening the valve back up).

Remove the lid

Stir in the sour cream and mozzarella cheese and mix until sour cream and cheese are completely melted and smooth.

Dish and serve topped with Parmesan cheese and fresh basil.
