Baked Salsa Chicken

This super easy chicken salad is perfect for a busy weeknight. Dovetailing Tip: Cook an additional 2 to 3 chicken breasts with out the salsa and taco sauce to use in Chicken Biscuit Potpie on day 4.

Ingredients:
2 boneless skinless chicken breasts halves (5 ounces each)
1/8 teaspoon salt
1/3 cup salsa
2 tablespoons taco sauce
1/3 cup shredded Mexican cheese blend
Optional: Lime wedges and sliced avocado


Directions:
Place chicken in a shallow 2-qt. baking dish coated with cooking spray. Sprinkle with salt. Combine salsa and taco sauce; drizzle over chicken. Sprinkle with cheese.

Cover and bake at 350° for 25-30 minutes or until a thermometer reads 165°. If desired, serve with lime wedges and sliced avocado.
