This Sweet Onion Side Dish Goes With Everything

The wizards at Cook’n have done it again because I came across the best recipe from my recommendations that is now going to become a staple in our house. We are big time onion lovers in this house. One of the hardest choices I have to make on a regular basis is whether to get my go-to burger at In ‘N Out with the nice thick slice of raw on it, or whether I want it “animal style”, which has delicious caramelized onions in a mustard sauce. It is really tough because they are both so perfect--the next step I need to do is get really get crazy and add both to my burger! That’s how much I love onions.This recipe is not for the person who needs to cut up onions as small as possible to hide them, this is for the onion lovers out there. You are going to cut these onions in big, thick rings in all their onion glory.


The next time you have several onions in an onion bag that you need to use up, look no further than this perfect onion casserole--called “Tennessee Onions”. It is what you get when you combine tons of thickly sliced onions along with a bunch of butter, lots of garlic, a lovely arrangement of spices and not one, not two--but three kinds of cheese! Could this side dish sound any more heavenly?


This onion casserole is typically served as a side with something like barbeque, but would be fabulous on top of a burger, or even as a main dish for a vegetarian casserole. Your vegetarian friends could also use this instead of meat on their burgers. Honestly, it would go great as a side dish for any meat meal--I’m thinking meatloaf, chicken thighs, pot roast, the list goes on and on. It is great as a side dish to bring for a potluck dinner. You just watch how quickly this sneaky dish disappears.


Tips to make these onions turn out the very best:

  • Start with sweet onions--Vidalia is the recommended variety, but any sweet variety will do.
  • Make sure your onions are sliced evenly, about ½” thick.
  • Get the highest quality cheese you can for this recipe--it makes a big difference. I bought the real parmesan to grate on my own instead of the kind you shake out in the jar, as well as shredded my block of trusty medium Tillamook cheddar cheese and it turned out delicious!

Tennessee Onions

Baked Vidalia Onions with Cheese, Butter and Herbs Author: Loaves and Dishes

Ingredients:
2-3 whole vidalia onions, or any sweet onion will do
4 tablespoons unsalted butter
garlic salt, to taste
pepper, to taste
1 cup sharp cheddar sharp cheddar cheese (the better quality, the better taste)
1 cup mozzarella cheese
1/2 cup Parmesan cheese
fresh oregano or other herbs, for garnish


Directions:
1) Using non-stick cooking spray, prepare a 9x13 baking dish.

2) Heat oven to 350

3) Slice the Vidalia onions in 1/4 to 1/2 inch slices and separate the rings.

4) Lay the rings in the prepared baking dish

5) Sprinkle the onion rings with garlic salt (about 1 tsp), pepper (about 1/2 tsp).

6) Cut the butter into pats and place around the dish on top of the onions.

7) Spread the cheddar and mozzarella cheeses on top of the onions and then top with the grated parmesan cheese.

8) Bake at 350 uncovered for 30 minutes or until bubbly and the cheese has started to brown (browned cheese bits is one of the best parts!)

9) Remove from the oven, allow to cool for a few minutes, garnish with some fresh herbs (oregano, chives, thyme all work well) and then serve.
