The Easiest (And Tastiest) Cookies Ever!

Today I want to tell you about my very favorite cookie recipe to make. These are always such a hit everywhere I take them and they literally could not be easier! They taste so decadent and have the perfect chewy cookie texture--you’d surely think whoever made these cookies executed some complex recipe to a tee! However, all it takes is 5 ingredients that you likely already have on hand.

The main ingredient you will need, which brings the much needed rich chocolate flavor is a box of Devil’s Food chocolate cake mix. Any brand will work, but this is the best flavor to use to capture that deep chocolate flavor we are going after. You will also only need 2 eggs, ½ cup canola oil, 1 cup chocolate chips and one box of Andes mints. The Andes mints might be the thing you might have to make a quick trip to the store for. But if you’ve got a choco-holic in the house like me, check their “secret” (or not-so-secret ha!) hiding spot with their stash of chocolate and you’ve got a fair shot at finding a box of Andes mints :)


These Andes mints are really what take these cookies to the next level and are the reason this cookie recipe is different than all the rest. While the cookies are baking in the oven for only 8 minutes, you will be busy unwrapping your Andes mints so they are ready to go when the cookies are done. As soon as that timer beeps, press one mint on top of each cookie, wait a couple extra minutes for that to melt, and spread the melted mint chocolate around on top of the cookie with a spoon to create a kind of cookie “frosting”. They are delicious when they are still warm and gooey, but are plain sinful when left overnight or for a few hours to the point that that mint chocolate hardens up again. These are the best cookies, I’m telling you!


I had my little baker daughter, who never shies away from baking any time-consuming recipe, whip these up last night and she can’t wait to have these in her repertoire to get that delicious cookie fix with very little time and effort! My mother-in-law, who introduced me to this recipe, loves to bake them up and keep the leftovers in the freezer and just pull one out at a time to enjoy when you need that fix! I’m looking at you, my fellow chocolate-stashing choco-holics!

Andes Mint Cookies

Andes Mint Cookies are my new favorite cookie. They are so easy to make. They are the perfect combination of mint and chocolate, and you will go absolutely crazy for these. Author: Camille Beckstrand Recipe Type: American Total Time: 19 mins

Serving size: 30

Ingredients:
15.25 ounces cake mix mixes (Devils Food Cake Mix)
1/2 cup vegetable oil
2 eggs
1 cup semi-sweet chocolate chips
30 Andes Mints


Directions:
Preheat oven to 350 degrees F.

In a large bowl, combine cake mix, oil and eggs.

Roll dough into a 1 inch ball and place on baking sheet.

Bake for 6-9 minutes.

Take baking sheet out of oven and while cookies are still very hot, place an Andes Mint on top of each cookie.

In about 5 minutes, the mint will be melted. Take a spoon and smooth out each mint like frosting.
