Fruit Salad- Yummy Yummy!


You know you’re a parent when the Wiggles’ song “Fruit Salad” pops into your head anytime you hear the phrase. But seriously- fruit salad is “yummy, yummy”!!

Fruit salad is my best friend in the summertime. Sometimes it’s hard to just limit myself to ONE fruit because there are so many delicious fresh options! With a fruit salad, you can have more than one type of fruit without binging- the perfect solution!

But there are so many other benefits as well! A fruit salad is easy to put together, and it’s a fresh, beautiful addition to any table. You can create different color combinations to coordinate with holidays or simplify because they taste amazing! It’s also something I can serve and know that my kids will eat without complaining- and they’re getting tons of nutrients at the same time! It’s also the perfect way to use up any random fruit you have on hand that needs to get used before it goes bad.

Basically, I love fruit salad.

While you can obviously change up your salad by serving different fruits, you can also add in other mix-ins to switch it up! Some great options are :

  • raisins or even yogurt-covered craisins
  • nuts like pecans, walnuts, pumpkin seeds or almonds
  • mini marshmallows
  • sweetened coconut flakes
  • mint leaves
  • chia seeds
  • ground flaxseed
  • poppyseeds
You can also change it up simply by dressing it differently. There are so many “dressings” you can use on a fruit salad! You can keep it as simple as lime juice and Stevia, or you can spruce it up! Yogurt, whipped cream, whipped topping, pudding mix and milk, marshmallow fluff, orange juice, cream cheese, frosting, extract or any combination of these would be a decadent way to spruce up your fruit salad!

Try some of these combinations:

  • Marshmallow fluff whipped with orange juice
  • Whipped topping and strawberry cream cheese
  • Vanilla yogurt and pistachio pudding mix
  • Melted vanilla frosting with a fruity extract (banana or orange would be tasty!)
A recent fruit salad I put together was red seedless grapes, cherries, blueberries and strawberries, all mixed with a little lime juice and Stevia. It was heavenly! I made it 2 days in a row and both times my kids couldn’t get enough.

Tangy Fruit Salad

The perfect summertime salad to add color and fresh, delicious fruit to your table!

Ingredients:
2 cups diced strawberries
1 1/2 cups halved red seedless grapes
1 cup blueberries
11/2 cups quartered red cherries
1-2 tablespoons lime juice
1 teaspoon Stevia , or other sweetener


Directions:
Combine all ingredients in a medium mixing bowl and gently mix together. Serve and enjoy!
