Guacamole Salad

Turn your guacamole into a salad your friends and family can enjoy by the spoonful by dicing the avocado (instead of mashing) and adding cucumber. Be sure to add a good squeeze of lime on top of the dish to keep the avocado from browning.

Ingredients:
3 avocados, diced
2 cloves garlic, chopped 
1 english cucumber, seeded and finely diced
1/2 bunch fresh cilantro, chopped 
1/2 medium red onion, finely diced 
2 tablespoons extra-virgin olive oil 
1/2 teaspoon sweet paprika 
1/2 teaspoon dried oregano 
1 lime, juiced 
hot sauce, as desired
kosher salt and freshly ground black pepper 


Directions:
In a medium bowl, combine the avocado, garlic, cucumber, cilantro and red onion. In a separate small bowl, stir together the olive oil, paprika, oregano, lime juice and some hot sauce, salt and pepper. Drizzle the dressing on top of the vegetables and fold to combine. Taste and adjust the seasoning.
