The Easiest Cookie You’ll Ever Make!

Fall is here which means- more baking!! :D I love being able to use the oven without stressing about the heat! But I’ll be honest- sometimes with 3 young kiddos 4 and under, it’s hard to find the time to do a lot of baking. There have been a few occasions the past few weeks in which I have found myself in need of baked goods, but with little time or energy to do so :). The recipe that has been saving me are these amazing cake mix cookies!

I LOVE cake mix cookies. They have such a good flavor and texture, and they are SO EASY. I’ve just gotten in the habit of keeping a few different cake mixes on hand so that I can easily make these cookies when I don’t have time for anything else.

To make these fabulous cookies, all you need is a box of cake mix, ½ c. vegetable oil, and 2 eggs. I’ve also tried a recipe with ⅓ c. oil and 2 eggs- and both are good- it just depends on how much you want your cookies to spread ;). (That’s the best part of this recipe- so flexible and easy, it’s hard to really mess it up :) ). Mix all these ingredients together and add a ½ c. of whatever mix-in you want. Bake at 350 for 10 minutes and you’ve got yourself a delicious batch of tasty cookies!

My favorite recipe go-to lately is using some kind of chocolate cake mix (devil’s food cake or triple chocolate fudge!) and adding mint chips. They look beautiful and they are so good… but then again I am a sucker for Mint Oreos and all things mint chocolate;). I’ve also used plain yellow cake mix and added milk chocolate chips, and those are wonderful too! The yellow cake mix definitely gives your cookie a unique flavor- almost cake batter like, but cooked and in the form of a cookie- so tasty:).

You could do so many things with this simple recipe! Here are a few variations you might want to try:

Strawberry cake mix with white chocolate chips (or coconut!)

Chocolate cake mix with chocolate chips

Yellow cake mix with Heath bar

Yellow cake mix with caramel bits

Yellow cake mix with Butterfinger pieces

Chocolate cake mix with Reese's Pieces

Lemon cake mix with white chocolate chips (and maybe even crushed up Lemonheads!)

Lemon cake mix with blueberries and white chocolate chunks

Yellow cake mix with M&M’s

Red Velvet cake mix with white chocolate chips (or your favorite cream cheese frosting!)

White cake mix with dark chocolate chunks

Spice cake mix with butterscotch chips

Spice cake mix with cinnamon chips

Chocolate cake mix with caramel bits

Funfetti with extra sprinkles or white chocolate chips

Yellow cake mix with butterscotch chips and pretzel pieces

Yellow cake mix with toasted pecan pieces
