Big Beautiful Tomatoes!


Question: I had a huge crop of tomatoes this year (Roma and Ultra Girls). I decided to make tomato sauce, but it came out really sweet. Ingredients included fresh skinned tomatoes, basil, oregano, garlic, chili peppers, cayenne and cinnamon. What can I do to make it less sweet next time? James

Answer: My best guess is that your sauce was sweet because your tomatoes were sweet. Besides growing varieties that have more balance between sweet and tart, you might try adding in some more bittering, savory herbs, like bay leaf or a greater amount of oregano.
