I Won't Live Without It!

I subscribe to a wonderful magazine, Mary Jane's Farm. It's been around for 11 years now, and it's full of inspiration, common sense solutions to everyday household dilemmas, and great products I've found I simply won't live without.

One such product is Mary Jane's ChillOver Powder. It's an easy-to-use alternative to that common animal-based KNOX Gelatin.

Looks like gelatin. Tastes like gelatin. It isn't. It's better! Mary Jane's innovative ChillOver Powder is for all the people who grew up loving gelatin desserts but gave up on them, knowing their animal origin. It sets up in half the time gelatin does. The texture is far superior to any type of gelatin I've used. 4 packets yielding 16 servings is $4.95. Spendy it seems, but the results are always amazing with this elegantly healthy alternative to animal-based KNOX Gelatin.

Make Your Knees Weak Chocolate

Smooth as silk and so delicious, this will easily become a family favorite, so be sure to keep ingredients on hand!


Serving size: 8
Calories per serving: 231

Ingredients:
1 packet ChillOver Powder
1/2 cup sugar
1/8 teaspoon salt
1/3 cup unsweetened baking cocoa
2 egg yolk
1 (14-ounce) can unsweetened coconut milk
1/2 teaspoon almond extract
3/4 cup heavy whipping cream
Optional: whipped cream, shaved chocolate, powdered sugar, and toasted coconut for garnish


Directions:
1. Blend together ChillOver Powder, sugar, salt, and cocoa powder in a medium saucepan.
2. In a separate bowl, beat together egg yolks and coconut milk. Add to saucepan and beat well. Cook over medium-high heat for 5 minutes, stirring frequently. Remove from heat, stir in almond extract, and cool until mixture reaches the consistency of unbeaten egg whites.
3. Beat cream until it holds stiff peaks. Fold into ChillOver mixture.
4. Pour into a 4-cup mold or serving dish, and chill until set. Garnish as desired.
